23rd of Febrary 2013: Chef demonstration – Pulled & Blown Sugar
We had Chef J giving us the demonstration today. He is extremely informative, methodical, organised and technical. I really enjoy his classes not just because I learn a lot from him but because he is so passionate and dedicated to his profession. It’s very inspiring. He can be intimidating at times but that’s only because if you step out of line or fall below what he believes to be mediocre standards. In today’s class he recapped on casting and pulling sugar then taught us the techniques of blown sugar and pastillage. This was what Chef J created today:
